I always have to have olive oil in my pantry. A staple. It is great for a lot of type of foods and most importantly I really like the taste.

Did you know that you can bake with olive oil too? This is not something we normally think about, but when you use the lightest, or least flavorful type it really works and is much healthier! Good thing that Carbonell has three distinct varieties, which are each suited for a different cooking need:

Carbonell Olive Oil Cookies

  • Daringly Expressive Extra Virgin Olive Oil has a rich taste and smooth flavor that will make any dish pop with Spanish personality. Use Carbonell Extra Virgin Olive Oil for salads, dips, marinades and drizzling over finished dishes. When you use the Daringly Expressive Extra Virgin Olive Oil, you give yourself permission to be a more daring and expressive version of yourself.
  • Fantastically Light Extra Light Olive Oil has a light taste that will take your meal to new heights.  Use Carbonell Extra Light Olive Oil for high-heat cooking such as frying, sautéing, and even baking.
  • Distinctly Classic Olive Oil has a traditional flavor that harkens back to the heritage of Cordoba. Carbonell Classic Olive Oil is an all-purpose cooking oil, adding a mild flavor to soups, sauces and grilled meats and vegetables.

Today I’m going to share a ‘healthy’ cookie recipe with a twist. Gluten Free style!

Mint Chocolate Chip Olive Oil Cookies that are gluten-free! See notes below on how easy it is to make Paleo or Vegan.
Ingredients
  • 1 1/2 c almond blend
  • 1/8 c coconut flour
  • 1/2 tsp baking soda
  • 1/4 c organic cane sugar
  • 1/4 c organic brown sugar
  • 1/8 c Carbonell Extra Light Olive Oil
  • 1 tsp organic vanilla flavoring
  • 1 egg
  • 1/8 c unsweentened almond milk
  • creame de menthe chips {here is the twist that you can really subsitute what you want – chocolate chips, peppermint chips, or shaved raw dark chocolate to be the healthiest}
Instructions
  1. Preheat oven to 350.
  2. Add dry ingredients in a bowl and mix.
  3. Slowly add in wet ingredients – extra light olive oil, unsweetened almond milk, vanilla and egg.
  4. Stir in chips or your shaved chocolate pieces.
  5. Mix will be drier then you are used to. Use hands to form balls and lay on cookie sheet.
  6. Bake for 13-15 minutes and enjoy!

I use organic products whenever I can, but of course you can use what you have on hand. Also substitute the sugar to make Paleo or the egg to make Vegan. Play around to create your ‘healthy’ cookie, but don’t forget the olive oil!
