Mint Chocolate Chip Olive Oil Cookie Balls

I always have to have olive oil in my pantry. A staple. It is great for a lot of type of foods and most importantly I really like the taste.
Did you know that you can bake with olive oil too? This is not something we normally think about, but when you use the lightest, or least flavorful type it really works and is much healthier! Good thing that Carbonell has three distinct varieties, which are each suited for a different cooking need:

Today I’m going to share a ‘healthy’ cookie recipe with a twist. Gluten Free style!
Mint Chocolate Chip Olive Oil Cookie Balls
- 1 1/2 c almond blend
- 1/8 c coconut flour
- 1/2 tsp baking soda
- 1/4 c organic cane sugar
- 1/4 c organic brown sugar
- 1/8 c Carbonell Extra Light Olive Oil
- 1 tsp organic vanilla flavoring
- 1 egg
- 1/8 c unsweentened almond milk
- creame de menthe chips {here is the twist that you can really subsitute what you want – chocolate chips, peppermint chips, or shaved raw dark chocolate to be the healthiest}
- Preheat oven to 350.
- Add dry ingredients in a bowl and mix.
- Slowly add in wet ingredients – extra light olive oil, unsweetened almond milk, vanilla and egg.
- Stir in chips or your shaved chocolate pieces.
- Mix will be drier then you are used to. Use hands to form balls and lay on cookie sheet.
- Bake for 13-15 minutes and enjoy!
I use organic products whenever I can, but of course you can use what you have on hand. Also substitute the sugar to make Paleo or the egg to make Vegan. Play around to create your ‘healthy’ cookie, but don’t forget the olive oil!
