My new Gluten Free Gnocchi with Chicken Sausage recipe. What are my main goals most nights when I prepare dinner? Healthy and Easy. Add Fast in there too on many days. Between all the activities going on this time of year our calendar is booked and meals are harder to fit in. I am very thankful to find Cappello’s Gluten Free Pasta!

Today I’m sharing with you a gnocchi recipe with you. I have never had gnocchi – a taste between a pasta and a potato I would say – and I was excited to give it a try! I wanted to use ingredients I mostly always have on hand, plus make it something my kids would eat.
Chicken Sausage & Gluten Free Gnocchi
Cut 1 cup each of Onions and Peppers in slivers. Any color will work.
Chop up approx 6oz of Chicken Sausage. I used Sweet Italian from Trader Joes.
I cooked these items in a pan with a dash of olive oil and garlic.
At the same time add Cappello’s Gnoochi to boiling water and cook according to directions.
After 3-5 minutes drain and add to sausage, peppers and onion.
Mix in 1/2 c of freshly shaved Parmesan, Romano, or Asiago Cheese. I used a mix of all 3 from Trader Joes.
Mix in 2 TBLs of chopped fresh parsley & sprinkle in pepper to taste.
I’m not done yet though. We can’t forget dessert!
