I wanted to make something fun for Easter. Something bright and colorful to celebrate my favorite spring holiday. My only requirement was my usual one – it had to be EASY – I decided on Lemon Poppyseed Muffins that were bright and colorful.
We just received a package from McCormick in the mail and decided to flip through their online Look Book to get some ideas.

Not sure I was really in the cupcake mood for this occasion, I easily saved my selections in my McCormick Look Book to look back another day. I asked O’Bear to help me in my search and we found lots more yummy foods to try sometime…Cinnamon Pancakes, Raspberry Brownies, and then we found what we wanted to make!
Lemon Poppyseed Muffins
‘But wait!’ I can hear you saying…’those aren’t bright and colorful’. See what we did…
We made the recipe exactly like we were supposed to. Simple!
Makes 24 (1 muffin) servings.
Prep Time: 10 minutes
Cook Time: 23 minutes
2. Mix all ingredients in large bowl with electric mixer on low speed 30 seconds or until moistened. Beat on medium speed 2 minutes. Spoon batter into prepared muffin cups, filling each cup 2/3 full.
After this step ~ we went on an adventure…
I took the muffin mix and divided it into four. I picked up the McCormick® Assorted Food Colors and dropped different colors into each bowl.
I had also bought some cute cupcake/muffin holders. We were determined to be bright and colorful!
O’Bear helped me pour batter into the tins. We even layered a few of the slots with multi-colors. They were going to be so pretty!
Bake 18 to 23 minutes or until toothpick inserted into muffin comes out clean. Cool completely on wire rack.
