We have a favorite breakfast around here. Bagel egg pizza. They don’t take long to make and not one child complains – that is a great accomplishment!

All you need is your favorite bagel, a package of free range eggs, sausage or bacon, and a pile of real cheese.

Why Use Free Range Eggs

Let’s talk about eggs for a minute. I used to believe that Organic was the best egg you could buy, but a few months ago I did a little research and learned that Free Range or Pasture Raised was really the best. Don’t let this confuse you with Cage Free. Many times companies take chickens out of the their cage, just to cram them in small indoor space with lots of other chickens.

Nellie’s Free Range Eggs come from the first Certified Humane farm in the country where the hens have as much access to outside as they want. They get to roam outside or come in when the weather is bad. They eat antibiotic-free feed and have fresh water to drink at all times. It’s good to be a chicken on these small farms.

2 bagels. Choose your favorite flavor. We like plain, everything and asiago cheese.

4 Nellie’s eggs, scrambled. (Try 1 minute scrambled egg in the microwave for a fast cook).

breakfast sausage or bacon, cooked and crumbled.

Cabot cheese, shredded.

Cut your bagels in half so you have a total of four. Scramble your eggs then spread evenly over of the four bagel halves. Top with cooked and crumbled bacon or breakfast sausage. Grate and sprinkle the cheese on top.

Place in over or toaster oven for a few minutes until cheese is melted and bagel is toasty.
