Pumpkin Nut Granola Topping

I’ve been wanting to make a granola topping for a long time. It’s a good snack that I keep right on the counter in an airtight container to grab a handful when I need something to munch on. Making my own is way too easy for me not to have done it before!

Planter’s has some great seasonal nut flavors that are perfect for making granola! We headed to Walmart to buy some.

Many stores have a unique looking sleigh display with the seasonal containers, but I found mine up front by the registers. Holiday Nut Crunch, Cocoa Almonds, Brittle Nut Medley, Winter Spiced Mix and the Holiday Tin Collection. I bought the last one for my recipe and I love the tin!

It contains a mix of peanuts, almonds, cashews and pistachios. Yum!

Let me share how to make Pumpkin Nut Granola Topping to put on yogurt, oatmeal, ice cream or eat out of your hand like I do!

In one bowl I dumped the dry ingredients (minus what I kept nimbling on!) Use a BIG bowl because this makes a good amount.

4 C oats

3 1/2 C approx of the nuts from the tin.

1 C pumpkin seeds

In a smaller bowl combine the wet ingredients.

1/3 C coconut oil, liquid

1/2 C honey

1t vanilla

1T cinnamon

1T pumpkin spice

Combine bowls and spread on a cookie sheet – you will need two. Bake at 300 degrees for 10 minutes. Stir up and bake 10 minutes more.

The house will smell so good!

Granola

If you gift the Holiday Tin, write out the directions to my Pumpkin Nut Granola Topping and include it inside with the nuts. The nuts are sealed in a bag inside so they won’t harm  your paper.

It was my brother’s birthday so I added my yummy creation right back into the tin to gift it. He loved it. I still have more I can gift to others if I want. I told you it makes a lot!
