Chicken Caesar Salad Pizza Recipe
Chicken Caesar Salad Pizza is the perfect summer recipe. Pull out the grill and fire up some lemon chicken. Combine your favorite salad greens on a garlic cream cheese base.
Do you ever get together with your friends and swap family friendly recipes? I’m always in need of new ideas and this is a recipe a neighbor gave to me a few years ago that has become a favorite! She says they make it all the time and I was so excited about it that I went to the grocery right away to buy the ingredients I needed. We’ve been eating it at least monthly since!
Chicken Caesar Salad Pizza
1 ready made pizza crust (or make your own!). I’ve been grabbing fresh ready to go crusts at Whole Foods in their pizza making department!
1/2 c shredded parmesan cheese, divided
1/2 c Caesar salad dressing
1 tsp of lemon pepper seasoning
1 garlic clove
1 8oz package of cream cheese
3 boneless, skinless chicken breasts, cooked
4 c thinly sliced romaine lettuce (I used a spinach mix here!)
1/2 c diced red pepper, optional
1 can pitted ripe olives, optional
Preheat oven and bake your crust as instructed on your pizza stone.
In a small bowl combine 1/4c of parmesan cheese, dressing, seasoning, & garlic. Mix well.
Combine cream cheese and 1/2 of the dressing mixture. Mix well.
Chop half of the chicken into small pieces and add to the cream cheese mixture. Slice remaining chicken into thin strips for your topping.
Slice your lettuce, olives, and red peppers and combine with remaining dressing mixture.
Spread cream cheese mixture on top of baked pizza crust. Top with salad mixture. Place remaining chicken on top and sprinkle with remaining parmesan cheese.
Pizza slice and eat.
