Eating Clean for 30 Days Will Change You
I challenged myself to eating clean for 30 days. It was a test to myself to see how my body would react. I was going gluten free, dairy free and {mostly} sugar free. I had never done anything like this and while I was nervous, I was super excited to get started.
What did I do differently for a month?

I stocked my pantry with almond, coconut and tapioca flours.
I used stevia, dates and honey as sweeteners.
My fridge was full of sparkling waters, teas, almond milk and non-dairy yogurts.
I did use goat’s milk for kefir and cheese.
I made sure I had a ‘dessert’ on hand for my sweet tooth, whether it was protein ball using gluten free oats or a flourless cookie using cacao chips or a sweet bread using one of the flours above.
Fruits and veggies? I had an abundant cut up and ready to grab. Hummus was my best friend. Smoothies were always being blended. I roasted sweet potatoes, beets (for the first time ever!) and squash to eat through out the week.
I had chia and flax seeds sitting on my counter and threw them in everything.
I used many recipes from my Pinterest boards that I’ve collected over the years. Paleo Yummies, We Need to Eat our Veggies, Healthy Snacks, Desserts You Won’t Feel Guilty Eating, I Should be Gluten Free (and now I finally was!).
The goal was for my gut to feel better. I was tired of morning stomach aches. I NEEDED more energy too. Did I want to lose weight? That was definitely an added bonus and 11 pounds off sure made me smile.
My palate expanded! Bison burgers over beef. I learned what a falafel was and now eat them all the time. I want salads instead of a sandwich when we eat out.
What surprised me the most was, the food I used to eat and crave, I no longer do. After 30 days I don’t want to go back. I still don’t want the bun on my burger, I eat my burritos in a bowl, ice cream only if it is made with almond or coconut milk. The sugar is a little harder. I heard Dr. Oz say once that if you eat well 80% of the time, your body should stay in your healthy state. Don’t feel bad about having your favorites sometimes. It’s {real} chocolate for me!
I have become that lady in the grocery store aisle you don’t want to be following behind. I read all labels looking at the ingredient list, how many grams of sugar it has, and if it is dairy and/or gluten free.
