Orange Honey Oatmeal Cookies

I am a honey girl. When served waffles or pancakes, I never choose syrup. Honey on bananas. Honey mixed with peanut butter for a great dip. Even honey as a sweetner in my baking goods. Wait, I forgot dipping my finger in the honey jar! Love it.
When I heard about Don Victor Honey at Walmart I had to try it! You know why? The honeycomb is found in the jars. I raced to the Hispanic Aisle at found my Don Victor Orange Blossom Honey near the baking items. Their honey is raw, filtered, not heated or processed in any way. Just the way I like it!
Did you know that honeycomb can be eaten? I totally did not! It’s not hard like you would think, but gooey and a bit chewy. Spread it only a warm slice of bread and try it out!
I wanted to first test it in a honey cookie recipe I have been eyeing. My idea was to add the honeycomb on top! I love to give my cookies away and so while I was at Walmart I also grabbed a Pioneer Woman plate that was very affordable and festive for the holidays.
Orange Honey Oatmeal Cookies

3 TBSP butter, room temperature important!
1/4 C brown sugar
1/4 C Don Victor Orange Blossom Honey
1 egg
1TBSP water
1 tsp orange extract
1/2 C flour
1/2 tsp salt
1/4 tsp baking soda
1 C rolled oats
1/4 C dark chocolate chips or raisins
Honeycomb from Don Victor Honey crumbled on top.
Preheat Oven to 350 degrees. With mixer combine butter, brown sugar, honey, egg, water and orange extract. Slowly stir in flour, salt, baking soda, oats, plus chocolate chips or raisins.
Place dough in fridge for an hour to harden. Drop spoonful onto cookie sheet and bake for 12 minutes. Should make approx. 20 cookies. Cool on wire rack.
Cut up honeycomb and place on on top of each cookie. It’s a bit sticky gooey, but I love seeing the honeycomb on top. So different!
I want to add that they are delicious warm and served with vanilla ice cream too!
