All the Yummy Food Week Giveaways end tomorrow so I wanted to send you off with something yummy that you can make at home. I couldn’t decide what I wanted to share!
I thought about a good chip dip that Hubby makes with feta cheese/green peppers/tomatos/onion because Julie from A Year With Mom and Dad blogged about her Texas Caviar Salsa which looks awesome!
Or maybe a good dessert? Remember my Pumpkin Bars with Cream Cheese Frosting I shared? I know of at least three BeachBums that made that and loved it!
But I decided in honor of my sister-in-law’s new blog Chicky Poo I would share with you an egg casserole that we made for Christmas breakfast! She is collecting 1001 egg recipes on her blog so she would love your help because she has 989 to go!
8 frozen hash brown patties (I used southern style or cubed hash browns)
4 cups shredded Cheddar cheese
1 pound cubed fully cooked ham
1 cup milk
1/2 teaspoon salt
1/2 teaspoon ground mustard
1. Place hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with cheese and ham.
2. In a bowl, beat eggs, milk, salt and mustard. Pour over ham.
3. Cover and bake at 350 degrees for 1 hour. Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.
I made a half a recipe for the four of us that eat eggs (though I did let P’Diddy try a bite of an egg today. Oh the face he made!) and it fit perfectly in this 8×8 pan. It was sooooo yummy there wasn’t a drop left! Enjoy! 🙂
