What I’m Eating #iheartomron #mamavation

Week 2 is over. Half way done with my Fitness Challenge. Last week I shared how I’m getting myself to move daily by walking 10,000 steps. That is on top of workouts that are planned out for me 5-6 times a week. Each day is dedicated to Upper Body, Lower Body, or Full Body. Sometimes I’ll also do our Nike Training program we have for our Xbox Kinect.

Today I want to share what I’ve been eating. For breakfast and lunch I’ve been drinking these shakes that Hubby was able to order for me. They are about gone now so I’ll soon need to get creative.

Snacks are nuts, dried fruit, or hummus with peppers. I also made granola yesterday! I was surprised at how easy it was.

Dinners are made following the Paleo diet, or what caveman would eat. No grains, refined sugars, potatoes, or dairy. It is very different not eating rice/pasta/bread with our meal, but I like it. My kids are learning to eat a lot of different foods!

Cashew Chicken and Mexican Burgers were a couple of my favorite nights. My favorite new veggie we’ve cooked is parsnip. Cut it up into pieces and add to a pan with olive oil and garlic and bake. They taste just like potatoes!

For dessert I made gluten-free Banana Cupcakes with Chocolate Coconut Icing from my friend who wrote the cookbook Living With Wellness. I have to make more because the kids thought they were wonderful!

 

The thing I love most is that my family is doing this together. The boys love to do my exercises with me or cheer me on or laugh when I start huffing and puffing and screaming that I’m done. ha! The meals are simple, completely fresh, and we all eat the same. No special kid food here.

Am I perfect? No way. I still try to get my chocolate in daily (mostly dark chocolate) and still eat my pizza on Friday nights.

 

It’s going good though! I stepped on my Ormon Fitness scale and I lost two more pounds. Slowly but surely I’ll get where I need to be! 🙂
