Homemade Strawberry Almond Milk
Lately the boys have heard rumors at school that kids love strawberry milk. I’ve been trying to steer clear of the subject because I am not buying it. It’s been four years since I wrote my post No More Cow’s Milk for Us and I intend to stick with it. I buy almond milk at the store weekly and have thought many times to try and make my own. I finally did try my hand at Homemade Strawberry Almond Milk using my new Nutri Ninja Blender with Food Processor. It was a success!
Who knew it could be so easy?
Homemade Strawberry Almond Milk
I’ll teach you how to make ‘regular’ almond milk, then you’ll just add the berries. Easy peasy!
1 cup of raw almonds. The most time consuming part is you’ll need to soak them in 2 cups of water up to 12 hours….so overnight works well.
Add your soaked almonds, 3 cups of filtered water and a pinch of sea salt to your blender and let it go for up to a minute.
Use a nut bag to strain the mixture in a bowl or jar. Squeeze out all liquid.
You now have unsweetened almond milk! {Set aside the almond clumps left in the nut bag. More on that in a minute.}
My favorite way to sweeten almond milk. Now add:
2-3 dates, pitted.
1t of vanilla or 1 vanilla bean
dash of cinnamon. {see secret health benefits of cinnamon}
To make Strawberry Almond Milk: 1-2c of strawberries
Add all the above (or whatever you choose) back into the blender for up to a minute.
Store in fridge and use throughout the week. I love almond milk in my coffee! Kids love the strawberry!
Now those almond bits you set aside from the nut bag? Make almond meal! Almond meal is just a courser term for almond flour. Use it in recipes in place of flour to make it gluten free. I used our leftovers to coat chicken and made homemade chicken tenders for dinner. Yummmmmmmm.
Homemade Almond Meal
Set your oven to a low setting. Mine is at 170 degrees. Spread the almond leftovers on a cookie sheet and warm in the oven for approx. 3 hours.
Use your food processor to grind it up after it is done baking. Store in airtight container.
